Special Spaghetti Bolognese 

I thought my first recipe should be my little take on my all time favourite meal….Spaghetti Bolognese! 

This is a meal that I like to use for meal prepping/batch cooking for the week! Whether it’s for your lunches or just to make to put in the freezer for the days where you just don’t have the energy to cook a full on meal! (Also it’s very cheap to make so very good for students & well anyone- who doesn’t like having a really tasty meal that if you go out to a restaurant is about £15 but you can make 5 portions for that same price and know exactly what is going in there!)

I aim this to serve 4-5 portions and like I said I use ingredients which I like and try to fit in with my healthy eating approach!

First off the ingredients: 

  • 350g of Wholewheat Spaghetti (I like to use Wholewheat Spelt Spaghetti as it’s higher in protein,fibre & vitamins – but is not gluten free)!
  • 400g of chopped tinned tomatoes 
  • 1 table spoon of olive oil 
  • 1 large onion
  • 1 garlic clove 
  • 1 table spoon of oregano 
  • 1 table spoon of basil
  • 2 table spoons of tomato purée 
  • 80 grams of mushrooms 
  • 1 courgette 
  • 1 carrot
  • 1 celery 
  • 1 red pepper
  • 1 beef stock 
  • 500g organic beef (low fat) 
  • Pinch of salt & pepper

For topping: ANY cheese – Parmesan is my fave for this meal!

Method:

  1. I start by getting everything prepared! And that’s by cutting up every single vegtable! Slice the mushrooms, dice the pepper,courgette,celery,carrot,onion & garlic. 
  2. I then heat up 1 table spoon of olive oil in a fairly large wide saucepan, then add the onions, carrots, courgettes & peppers for about 1-2mins 
  3. Once the time is done I then add the garlic and soon after the mince!
  4. Brown the mince off and add the tinned tomatos, mushrooms,beef stock, tomato purée, beef stock,oregano,basil, pinch of salt & pepper.
  5. Give it a good mix and leave to cook on a simmering heat for about an hour until starts to thicken.

Because I am cooking this as a batch cook I can cook my pasta near the end or during and drain and leave to cool down and then either mix in with the Bolognese or keep them separate! And of course then add the Parmesan or choice of cheese to top it all off!
